EASY STEP-BY-STEP TUTORIAL FOR STUFFED CHERRY TOMATOES APPETIZER
First, cook the bacon according to package instructions. I find it easiest to bake it in the oven. Allow to cool on paper towels and then crumble or chop it up.
Meanwhile, prepare your cherry tomatoes. Slice off the top off the tomato just below the stem. Then slice a tiny sliver off the bottom so the tomato won’t roll around on your serving tray.
Use a small measuring spoon to scoop out the pulp from the inside. Place the tomatoes upside down on paper towels to drain.
Next, prepare your filling. Stir together the softened cream cheese, mayonnaise, asiago cheese, bacon*, fresh flat leaf parsley, and green onions.
*Be sure to reserve some of the bacon bits for garnish later. You’ll also be garnishing with additional green onions and parsley.
Now it’s time to stuff your cherry tomatoes. Spoon your filling into a piping bag (or ziplock bag) and snip off the corner. Fill each tomato to the top.
The key to piping the filling is to make the hole in the bag just a tad smaller than your tomato but large enough to allow the filling to be piped out. This filling is quite chunky due to the bacon and green onions, so if you have smaller tomatoes, you may want to pulse the filling in a food processor for a finer texture, which will make it easier to pipe into smaller tomatoes.
Place the tomatoes on a serving platter and into the refrigerator until chilled, about an hour. Before serving, garnish with additional bacon crumbles, parsley, and green onions.
Enjoy these cheesy, bite-sized bundles of yum!

Excellent recipe and very tasty. We used cherry tomatoes, 3 lbs, doubled the amount of filling for the additional tomatoes.
Next time will use tomatoes larger than cherry tomatoes, the cheese filler is perfect with salad dressing rather than mayo, gives a hint of sweetness complemented by the saltiness of the bacon.

I’ve made these twice and everyone has loved them. I made them with small full size tomatoes and baked them and also have put the filling in portabella mushrooms and baked those. Absolutely delicious. Thank you for a great recipe!
